All purpose flour-1 1/2 cup
Pineapple essence-a drop
Salt a pinch
Brown sugar( firmly packed)-1/3cup
Preheat oven to 180c.
Mix brown sugar and melted butter well.Now transfer this mix to cake pan and using a spatula spread throughout uniformly.Now arrange pineapple rounds on them in any pattern of your choice.Keep the cherry in each tiny hole of pineapple rounds.Keep aside.
Seive flour,baking powder and salt together and keep aside.
Combine melted butter and sugar and mix well.Add egg one by one to this and beat till pale and fluffy.Add puneapple juice and essence and beat well.
To this mixture add the dry seived mixture and fold in.
Pour the batter on top of the pineapple base in cakepan.Tap gently to release air bubbles.
Now bake for 35 to 45 minutes based on your oven heat.Check if done by inserting a toothpick in the middle of cake.If it comes out clean its done.
Let the cake cool in pan itself.
Once completely cooled run a knife throughout edges between cake and pan.Turn it to a plate.
